Try to rent one and do a test trip before you buy. That’s what we did with our 400 BD. Of course, they are not common and it may be hard to find one to rent. We had to drive 1000 miles to rent ours. But it was a good trip and well worth it.
We have a 320S, but have a deposit on a 360 CS. In addition to the other good suggestions, here are some items we considered for a smaller camper . Everyone travels and/or camps differently, so some may not matter to you. We love our 320 and the NuCamp brand. We went to 3 RV shows this spring to compare small RVs as we wanted to go slightly bigger. There's a lot of poorly built campers with cheap materials. Is Nucamp perfect..no, but IMO it is way above most.
-Make sure the bathroom will meet your needs. The 360 does have a bit more additional head height over a 320, but still is cramped for many. Some people never use the bathroom, but others do.
-The CS only has a sink in the bathroom which is a bit difficult to access for brushing teeth, washing hands etc. We do use our shower in our 320, but changed the faucet to one which is better for showering , but not so much for washing hands.
-Does the camper have enough overall space for two when the weather outside keeps you inside. i.e. for changing clothes, getting into sleep ware at night. Two people often have to do a "dance" to sync. up when trying to occupy a small space.
-Does the cassette toilet work for you. Do a Youtube search how to empty. Some dislike it and only would go for a black tank. The capacity is small.
-Will you be traveling for long periods of time (weeks/months) vs long weekend camping. Creative ways to store clothes, gear and food storage is a must. There are many great ideas here and on the FB pages.
-Does the twin bed set up work for you?
-IMO, converting the 360 to the dinette from the bed configuration is not quite as easy as in our 320. I can set up our inside table in our 320 while my wife still sleeps to enjoy my morning coffee inside if it's cold outside or lousy weather. The 360, IMO is not quite as easy or "quiet".
-If the weather is very cold or crappy outside, how will you cook. Again, lots of great ideas, but something to think about. There is no ratcheting seat on the drivers side, so sitting in bed for long periods of time will require having bedding or something behind you rather thanthe seat back (like in a 320)
-The Alde can be expensive to get the glycol changed , unless you are a DIYer.
Pros: NuCamp quality, family of people, etc. Alde (there are some haters). But we love the quietness vs. a force air propane system A lot of good features packed into a very small area, especially storage in the 360. 360 layout. It's a perfect size for us. We looked at alot of other RVs for the last few months and only a couple "fit the bill" of the roughly hundred or so we looked at.

@Yoshi_TAB Very thoughtful and thorough response! And I think you are spot on on all points--- especially when describing the "dance" required for 2 people living in the 320. We found that the dance was a little to much for us (why we are considering the 360). I got kind of roasted in an earlier post on the whole sink thing in the 360 CS, but like you said -cooking aside, even for washing hands and brushing teeth, that bathroom sink is about like having no sink at all. That might be the dealbreaker for us on the CS at the moment. On either version, we'd plan to leave the beds made and then use pillows or cushions to allow us to sit dinette-style on either side. We'll be trying this out at the dealership at some point.
