Replace large fridge with smaller fridge?

We are in our second Tab 400 and absolutely love camping in it. Our first Tab was a 2021 400. We had the little fridge and no microwave. When we ordered our ‘24 400, the small fridge was not an option so we had to get the large fridge and no microwave again. We like the large fridge and have used it a lot last summer when we camped with the family. For regular use-we do just fine with the smaller fridge. 
I would love to modify the camper by taking out the large fridge and gaining back that closet that I miss so much. We would take out the shelves under the counter and put the small fridge in that space. 
I think we would say are moderately good at making modifications. I’ve seen some of the mods made by you all and I am in awe. For instance I’d love to replace the sink/faucet but seems like there is a lot we could get wrong. 

So my question is-has anyone taken out the large fridge and installed a smaller under counter fridge? Is it possible to get a door that matches reasonably well for a closet door? How challenging is it to install a smaller under counter fridge? We are looking for a 2-way under counter fridge. 
We’d love your input if you have thoughts or experience.

    Another example of how nüCamp has shifted from being customer focused with build options including, in many earlier years, non-standard-option builds to today's High Volume Streamlined Production. More and more original TAB design customers are finding the current nüCamp production volume approach impact on the TAB design/features a miss-match to their travel trailer needs.

    Now, I love my 2018 with its window A/C, black tank, usable but not super big fridge, and Alde System.  And while my 2018 is doing well and remaining 100% operational it is starting to show its age with over 43K towing miles so if/when it must be replaced - - - There is Not a Single nüCamp product today that has the comfort and features of the 2018 model-year [some say today's production also lack the materials quality of years past].

    Fingers-Crossed my 2018 continues to be functional in meeting my adventuring needs . . . as I hate the thought of givings up the versatile seating options of a 320S and wonderful Alde System when I have to purchase a Not nüCamp replacement.

    I would be dishonest if I said I didn’t miss our ‘21 Tab 400. We liked the bathroom and toilet of the ‘21 better but I really like the functionality of the new bathroom sink. Cabinet quality is different now. Definitely loved the old table and cushions way better! But we like having the heated tanks. 
    We had to keep reminding ourselves that it is a camper and the point is to travel, have good camping experiences, camp with friends and family, etc. It is still a great camper. We just want a smaller fridge. 🤔
