@Homebodyatheart I bought the same setup that Mandy Lea uses. The Upnfront receiver mounts on the tongue and Dave Pemberton at Upnfront recommended the Swagman Dispatch bike rack to go into the receiver. Here's the link to Mandy's video: http://tabforum.nucamprv.com/#/discussion/6218/a-great-bike-rack-solution I haven't tried out the bike rack yet, but it will get a good workout at Ucamp18 in a couple of weeks.

No cover for my bike although I am looking now for a cover for my bike when it is in the garage to keep the dust off. I have the 320S Boondock and mounted a Yakima Frontloader rooftop rack that easily clamps onto the two rack bars, with the front wheel part facing aft (to keep the handlebars lower). You can find this rack for as little as $158 on-line. When not in use it folds down low. If you get the keylocks (extra, about $40) you can lock the rack to the roof rack and lock the bike to the rack with a built-in cable. I use a 1 foot aluminum stool to load the bike up onto the rack but I am 6'2" and fairly strong.
Keep an eye out for low-hanging branches in the RV parks, they are usually lower than out on the roads.
I lived in a condo where the best bike storage was on an outside patio. I discovered my grill cover was a perfect bike cover. It is one of the small Charbroil covers, about 30 bucks on Amazon. Has held up well for five years or so. Kinda heavy duty, so I think it might create quite a bit of wind resistance, however.
