has anyone replaced the cooling unit in the Norcold model 305, if so, was there any specifics issues or is it advisable to replace the whole refrigerator?
Short Answer: Replace the whole fridge with a Model/Type you like.
Replacing the 'cooling unit' would be a difficult project
Even if you can source all the parts.
Longer Ans: N305 is an absorption refrigerator that requires a heat source.
So if the 120V heat source 'coil' is bad you should be able to replace it. Or if the Propane Burner Assembly is bad you should be able to replace it. Or if the 'cooling' gas has leaked out a technician might to able to seal the leak and recharge the system.
So if a section/part of the total cooling system is failing a repair might be doable - - - but you most likely will not be able to replace everything. The parts and time will nearly be the same cost of a new replacement. IMHO.
