    How ambitious are you? This is how I changed the kitchen and it's very functional. If you get rid of the glass top everything opens up, including the space to the rear of the sink. This setup provides a prep area and drain board options. We don't need the dopey TV, so all that space can also be used if you need it.

    I actually got to playhouse in a 360 recently . . .
    It is so near prefect for a Solo Traveler, like myself, that is ready for a bit more elbowroom and a fixed bed option that my 320S cannot quite do.   Far better than the earlier attempt with the 400-Solo layout.

    nüCamp changing or adjusting the kitchen to a more functional configuration as @Gomers2 has done would be a big plus.  Now changing the kitchen 'counter' is well within a DIY project, as Gomer2 has shown.  Increasing the black waste capacity is not a simple DIY task

    Off-Topic & Related:

    A 5-gallon cassette is just not ideal (IMHO).  Yes, one could carry a second cassette tank . . . but that does not change the physical effort to remove a full tank or the general unpleasantness that can happen while dumping what is in-fact a two-piece porta-potti that does not allow as effective waste breakdown and does not have a closed (hose & no lifting) loop dumping method like a standard (higher capacity) black tank.

    Kitchen adjustment or not - - - I would purchase a 360S if it had a Black Tank Option.

    Re the cassette, it's growing on us in terms of usability, really quite simple... But we nearly always have access to some type of bathroom, so it's only for overnight use as it were.
