Hi Jill,  if you're still looking i have a short list of removal instructions.  Let me know if you want i could put together some pictures or provide phone help.

    Removing the 3163.

     1.       Remove the screws holding the gray plastic side cover on the left (6 screws if they are all there).  Then remove 2 screws attaching the metal frame to the wooden cabinet on the left; these are exposed once the gray plastic cover has been removed.

    2.       Remove the 2” grating below the frig, should be held in place with 2 screws and washers.

    3.       Remove 2 screws attaching the sheet metal frig frame to the wooden cabinet on the right side of the frig.

    4.       Remove the thermostat adjuster knob, it should pull straight out.

    5.       At the front and outside of the trailer, remove the covers from the fresh air inlet and the exhaust outlet covers (3 screws in each).  Remove 2 screws each (black Phillips head, exposed after removing the covers) that attach the vent lines to the outside shell of the trailer.  Verify that the two vent lines are free, they should be moveable by pushing.  Note there will still be 4 screws that do not need to be removed for disassembly.  These four screws might need to be removed for reinstallation.

    6.       Unplug the 120V cord that is plugged in to the outlet in the lower cabinet space adjacent to the frig space.  Feed the cord through into the refrigerator space.

    7.       Pull the unit out partially until the propane supply can be accessed using two wrenches (support the small fastener and release the compression nut.

    8.       Pull the unit out a little more and disconnect the 12V supply (2 wires located just behind the propane connection.  One will be labeled + and one labeled -.  Be sure to mark each wire or take a picture so they go back in the correct place.

    9.       It is a tight fit getting the unit out of the space, my experience is to twist the unit slightly counterclockwise in the space and clear the tubing/wiring past the cabinet edge and then continue to slide out the unit.

Thank you @hammerstone - I printed this out and will bring to the RV shop who has said they are willing to remove the fridge for me. I so appreciate you taking the time to write these instructions down!
