Ours is a 2017 cs-s and the cabnetry is either solid birch or birch plywood

My '21 is solid birch but I don't think the new ones are solid anymore.

They are plywood with an ash appearance.  For 2024, they moved to a plywood with an outside layer that's like a vinyl coating--not an actual ply of ash.  Also, the edges of this plywood have a plastic material glued all the way around.  I was a bit disappointed when we picked up our 2024, but it at least looked nice.  The plastic edges were just proud of the surface in places, so I was concerned about it peeling over time.  This was certainly a cost-cutting measure- and likely to increase consistency across all their cabinets.

Here's a couple of shots I grabbed from an earlier discussion about some 360 problems.  I'm not suggesting you will have any problems with this material-- just showing you the material and how it looks if there's a crack or breach.  And honestly, that top layer is pretty tough and resistant to damage (unless you pull screws out of course!).
