How important is it to add bleach to the fresh water tank during dewinterization?

  Pretty accepted practice although you can use other sanitizers as well.  Too much risk for contamination and bacterial growth whether or not you drink the water.

  Lots of people do. I use Thetford 2 part cleaner/sanitizer.

  You do need to keep bleach out of the Alde, not good for stainless steel.
