We have found, that for our purposes, the two burner stove leaves a lot to be desired. For one the burner/regulators seem to be all or nothing, with no in between settings. Second is the size, meaning we can only use two small pans simultaneously, or possibly one small and one medium. Third issue is that the stove frame itself is physically attached the sink.
What I am thinking is using a dremel to separate the sink from the stove, and them removing the two burners and repurpose the stove to use a single, larger burner, and a higher quality regulator. I’d also like to install an ignitor as well.
We also have a stand alone camp stove so we’d have three usable burners.
Anyone ever attempt anything like this?

FYI - To remove that lower countertop, you have to remove the upper countertop which involves removing the fridge. The fridge comes out easy with 4 screws and a blade connector. Then you can get to the screws holding the upper countertop in place. Also, at least in mine, there is a trim board on the upright between the upper and lower countertop. You have to also remove that to get the lower countertop out. I was unable to get the gas line just disconnected at the stove, so just cut the copper, but then I was removing the entire propane system, so not an issue for me.
This is the sink I purchased

This is stove that would most likely fit in that space
