It will, but I wouldn't buy from a big box store. These places sell stuff that is 2nd tier quality, a John Deere mower at HD is NOT the same as one at a JD dealer for instance. No idea on the Honda Generator, but to be safe I would buy from a Honda equipment dealer.
Our family has a wholesale plumbing supply, and we've observed that the big box stores will sell the 'same' items (the same item number with perhaps an extra digit), and that these products are lower quality. Example: Just because it says 'Kohler', doesn't mean it's their best.

So this generator will run the 5000 BTU AC, but for how long? I’m only really interested in using it to cool my dogs while I’m away. Would that work? Would it be safe?

In many places, you cannot leave a generator running unsupervised. It’s a potential fire hazard when running, enough so that out West, they’re frequently banned on public lands during wildfire season, which seems to get longer every year.
