Wow, great news and having such a professional shop that close to home; a perfect situation. We upgraded to Battleborn when we had our 2019 t@b 400 but in the Haven we have the 270 battleborn battery with the heater and everything is controlled by the Victron unit. The DC to DC for us in both our 400 and now our Haven was a game changer. Another mod was we had a soft start installed on the a/c in the 400 and just had one installed on the Haven. The downside is once we installed the soft start on the Haven, we voided our Truma warranty but it is what it is. We like having the option of running the Haven off the batteries or our Delta EcoFlow Pro Solar Generator and not having the soft start, was always a huge initial drain when the compressor kicked in. I am very interested in learning more about your three stage water filter and portable water softener. Would you send pictures and specifics?

There are T@b 400s made in Germany, obviously with many differences. Chassis made by Alko, surge brakes instead of electric and different electrical components for 230V operation. I did find a German language manual online and the converter and 12V fuse panel are one unit and the 230V breakers are separate from it. Functionally it's not different from US made trailers so I'd start with making sure the converter actually gets 230V power. With the battery disconnected and on shore power, do any of the 12V lights etc. work ? If not look at breakers and gfci (if present).

Maybe try airing out the camper and using an odor absorber like activated charcoal or baking soda. It could help reduce or eliminate the mysterious smell.

I use white lithium, just a small amount to prevent galling. Been doing it for years, no issues. Definitely need to clean [anything] you use off as soon as unhitched, invariably DW will walk past and clean it off inadvertently lol.

At least drive the new Tacoma. It's really a great truck for camping. (I added a running board for a step for my mom.)
